Ingredients:
• 1 boiled Okinawan purple sweet potato (mashed)
• 1 1/2 cups oat flour (freshly blended from steel-cut or rolled oats)
• 1 tsp baking powder
• 1/2 tsp baking soda
• 1 pinch salt
• 1 whole egg
• 1 tbsp pure maple syrup (plus more for serving)
• 1/4 cup plain Greek yogurt
• 1 tsp pure vanilla extract
• Soy milk (or milk of choice), added gradually to achieve pourable batter consistency
• Butter or oil for greasing the griddle
Step-by-Step Instructions:
1. Mash Potato: Peel and thoroughly mash your boiled Okinawan purple sweet potato in a mixing bowl with a fork.
2. Blend Dry Ingredients: Add oat flour (made by blending organic steel cut oats), baking powder, baking soda, and a pinch of salt.
3. Mix Wet Ingredients: Add egg, maple syrup, Greek yogurt, and vanilla extract.
4. Add Milk & Rest: Slowly pour in soy milk while whisking until you reach a smooth batter consistency. Let the batter rest for 5 minutes so the oat flour absorbs the liquid, then stir in an extra splash of soy milk if needed to keep it pourable.
5. Cook on Griddle: Heat and lightly grease your flat-top griddle or skillet. Pour batter into rounds and cook over medium heat.
6. Flip: When bubbles and small air pockets appear across the top and center, flip and cook until golden brown on both sides.
