1 C. all purpose flour
1/2 tsp. salt
1/2 tsp. baking soda
1 T. sugar
1 C. buttermilk
2 T. melted butter
Mix dry ingredients into a mixing bowl and mix with a whisk. Mix together buttermilk, eggs, and butter. Add liquid ingredients to flour mixture and mix until just blended. Let batter stand for about 5 minutes while you preheat griddle or frying pan. Ladle batter on to uncreased griddle to form pancakes. Flip when bubbles form and pop, and pancake is golden. Cook other side an transfer to a plate. Serve immediately with butter, maple syrup or fresh fruit. Makes about 1 dozen 4-inch pancakes.
